This is an incredibly easy recipe that just requires some assembly. All you have to do for this recipe is to put the tomatoes, mozzarella, and basil in an alternating pattern on kabob skewers. Put two tomatoes, two balls of fresh mozzarella, and two basil leaves on each skewer. If you want to add a little more flavor, add some minced garlic or freshly ground black pepper to the cherry tomatoes and mozzarella. You can also lightly saute the tomatoes in olive oil and garlic cloves to add flavor before putting them on the skewer.

If you prefer feta cheese over goat cheese, that works just as well! For extra flavour and colour, add some sundried tomatoes as garnish. For a paleo-friendly version, you can use cucumber slices, radish slices, flaxseed crackers, or beef jerky squares as a substitute for the Melba Toast.
