Italian Wedding Soup


- 12 cups low-sodium chicken broth

- 1 pound curly endive, coarsely chopped (1 pound of escarole or mature kale leaves can be substituted)

- 4 cups spinach leaves chopped

- a box of small pasta like acini de pepe, pastina, or ditalini

- 2 tablespoon freshly grated Parmesan, plus extra for garnish

- Salt and freshly ground black pepper

- Italian meatballs

Put broth in a large pot and heat to a rolling boil over medium-high heat. Add in pasta and allow to boil until the pasta is at an al dente consistency. Add in the meatballs,  curly endive,and spinach into a pot. Simmer until the meatballs are cooked through and the leafy greens are tender, about 8 minutes in total. Season the soup to taste with salt, pepper, garlic salt, oregano, or Italian spice blend. Lastly add in the cheese and stir until it blends into the soup.

Dish out the soup into bowls and serve. Garnish soup with freshly grated parmesan cheese to add a formal touch.
